Ingredients
- 1 egg
- ¾ Cup Buttermilk (whole milk can also be used)
- ½ Cup Vegetable Oil
- 2 Cups AP flour
- ⅓ Cup Sugar (plus extra for sprinkling)
- 3 tsp Baking Powder
- 1 tsp Salt
- 2 Cups Blueberries (fresh or frozen)
Directions
Step 1
Preheat oven to 400 degrees. Gather ingredients and have a muffin tin lined. This recipe can also be used to make muffin tops in our Whoopie pie pan available in the kitchenware collection at tellsterrain.com. Spray the whoopie pie pan generously with nonstick spray.
Step 2
In a small bowl, whisk together egg, milk, and oil.
Step 3
In a medium bowl, blend together all dry ingredients.
Step 4
Add wet ingredients to dry and blend until combined. Fold in blueberries.
Step 5
If making muffins, add enough batter to fill muffin tins ⅔ full. If making muffin tops in whoopie pie pan, add enough batter to fill in tin but don’t overfill. Sprinkle white sugar on the top of each muffin.
Step 6
Bake for 20 minutes at 400 degrees. Allow to cool and enjoy!
