Decadent Coconut Macaroons

  • ⅔ Cup AP Flour
  • 14 oz of sweetened shredded coconut
  • ¼ teaspoon salt
  • 14 oz sweetened condensed milk
  • 1 egg white
  • 1 tsp vanilla extract


Step 1

Preheat oven to 350 degrees. Line a baking sheet with parchment paper and spray parchment with nonstick spray.

Step 2

In a large bowl, mix together flour, coconut flakes, and salt.  Toss with a wooden spoon or your hands to coat the coconut flakes with the flour.

Step 3

In a medium bowl, combine the condensed milk and vanilla extract.

Step 4

In another bowl, beat the egg white until medium peaks form.  

Step 5

Add the condensed milk mixture to the coconut flake mixture and combine well.  Then add the egg white.  I find it easiest to mix it all together with your hands to ensure it is well combined.

Step 6

Using a cookie scoop, add balls of dough on to your cookie sheet.  Do not flatten or press them down.  They won't spread much so you only need an inch or so between cookies.  Bake for 12-15 minutes or until golden.  Allow to cool on cookie sheet for 5 minutes and then move to cooling rack to cool completely.  Enjoy!
